Peach Pie.

In season peaches...

Peel five peaches.
Take the pit out of each peach and slice them into lovely little pieces. Toss these pieces into a bowl.
Into that same bowl, add 1/4 cup granulated sugar or (if you are feeling naughty,) brown sugar, and one teaspoon of cornstarch.
Spoon the fruit into a prepared or home-made crust, seal the peaches into that lovely pie with a top crust and make sure to cut a fancy shape out of the top to allow steam to escape. If you don't want to be fancy, use a sharp, skinny knife to make a few slits in the crust which will also allow steam to escape, but will not necessarily get your inner home-maker squealing with joy over how cute the pastry looks... whatever.
Pop that pie into a pre-heated 400 degree oven for 15 minutes to give the crust nice golden brown color and then reduce the heat to 350 degrees for an additional 30 - 35 minutes.
